The slaughterhouse – a subsidiary from the cooperative of Orylag® breeders – markets the rabbit’s flesh under the Rex du Poitou and Lapin Charentais brands.

Rabbits are fed exclusively with food based on alfalfa, wheat and sunflower (all guaranteed GMO-free). They are bred in cages twice as large as the regulations provide and they reach a 2.5kg weight. Additionally, they are bred twice as long as rabbits bred exclusively for flesh. Its firm, marbled, juicy and flavoursome flesh is cooked by Michelin-starred chefs and is recognized by food critics.

The Rex du Poitou’s flesh is currently a reference when it comes to rabbit meat.

Rabbits are fed exclusively with food based on alfalfa, wheat and sunflower (all guaranteed GMO-free). They are bred in cages twice as large as the regulations provide and they reach a 2.5kg weight. Additionally, they are bred twice as long as rabbits bred exclusively for flesh. Its firm, marbled, juicy and flavoursome flesh is cooked by Michelin-starred chefs and is recognized by food critics.

Nutrition

Rabbit’s meat has a similar taste and colour to poultry meat. Given that it is a lean meat, its texture is tender, like that of the chicken. It is also easy to cook and can be used in a wide variety of recipes.

Eating this meet provides a significant source of proteins and amino-acids (lysine, leucine and arginine) which are essential elements for the growth and development of the human body thanks to their participation in DNA-building. Additionally, rabbit’s meat is full of B3 and B12 vitamins, as well as phosphorous and selenium (very sought after by sports professionals). Phosphorous is the second biggest mineral in our organisms. It is essential for growth as well as for bones and teeth maintenance. 100g of rabbit meat gives 200 mg of phosphorous.
Rabbit’s meat, thanks to a high concentration of linoleic acid, acts as an hypocholesterolemic agent (or cholesterol-lowering agent)! Rabbit’s flesh also contains more than 35% of monounsaturated fatty acid. Rabbit’s meat is a dietetic food, but it is also full of vitamins facilitating energy production.
It is a perfect example of functional food that helps lower cholesterol, but also obesity and cardiovascular diseases.

The Orylag®’s fur is exceptionally soft and varies in colour – from brown to grey. Its hide is supple and strong at the same time. Its natural tanning, environmentally conscious, allows for a variety of finishing.
This is the result of quality breeding achieved by respecting animals throughout their lives, while taking things slow.
